Chris & Krystyna's Peachy Chicken and Boiled Rice
Ingredients:
Chicken ~ 4 chicken fillets or quarters, a tin of peach halves
Sauce ~ 12 tablespoons vinegar, 3 tablespoons Worcester sauce, 2 tablespoons wholegrain mustard, 6 tablespoons runny honey, ½ teaspoon Tabasco sauce, 1 teaspoon dried marjoram, 1 teaspoon dried oregano.
Preparation:
Chicken ~ Preheat the oven to gas mark 4 (350ºF - 180°C). Remove the skin from the chicken pieces, and place them in a roasting tin.
Sauce ~ Combine the honey, mustard, Worcester sauce, Tabasco sauce, marjoram, oregano and vinegar and pour over the chicken.
Cooking:
Cook uncovered in the oven for 30-35 minutes, basting occasionally. Add the peach halves, cut side down, and cook for a further 20-25 minutes, basting occasionally until the chicken is tender and the peaches are heated through.
Serve with boiled rice and a glass (or three) of dry white wine.
