Mixed Bean Casserole

 

Ingredients:

lb (225g) mushrooms, 2 courgettes, 2 leeks, 2 large onions, 1 red pepper, 1 yellow pepper, 2-3 large carrots, 2 sticks celery (optional), a large tin of mixed beans or similar quantity of dried mixed beans, a tin of chopped tomatoes, salt and pepper to taste, mixed herbs, 3-4 tablespoons olive oil. 

 

Preparation:

If using dried mixed beans, soak them in water overnight.  Chop all ingredients according to preference. 

 

Cooking:

Preheat the oven to gas mark 5 (375F - 190C).  Heat the oil in a wok and stir fry the vegetables for approximately 8-10 minutes.  Add salt and pepper if required, mixed herbs, beans and tinned tomatoes.  Mix together and put into a large covered casserole dish.  Cook on the middle shelf of oven for 50-60 minutes.

         

Serve with baked potato, pasta or rice and a bowl of mixed salad.  When the chef has tasted the meal, lay the table, pour the wine and then your guests can eat!
