Grdobina U Pecnici or Monkfish In The Oven
Ingredients:
Monkfish ~ 1 large monkfish (or monkfish tails if preferred), potatoes, onions, salt, freshly ground black pepper, vegetable oil.
Dressing ~ Vegetable or olive oil, garlic, flat leafed parsley.
Preparation:
Monkfish ~ Clean and wash the fish, ensuring that the body cavity is thoroughly cleared. Peel and slice sufficient potatoes and onions to generously cover the bottom of a large baking tray. Note: the pictured fish weighed approximately 7lbs (3.5kg).
Dressing ~ Peel and crush garlic. Wash and finely chop parsley. Add both to vegetable or olive oil. (All quantities according to taste.) Tell guests that they must wait for dinner.
Cooking:
Monkfish ~ Preheat the oven to gas mark 6 (400°F - 200°C). Arrange the sliced potato and onion in the baking tray, and place the fish on top. Season with salt and pepper, and sprinkle with vegetable oil. Cook uncovered in the top half of the oven for 40 minutes or until the potatoes are cooked.
Serve with freshly tossed salad and bread rolls. A nice bottle of white wine is recommended with the meal. Invite friends and family to dinner, and when there are no leftovers the chef can relax and enjoy the wine.
